Slow roasted pork dish, also known as Cochinita Pibil.
Grind spices into a powder and mix with remaining ingredients in a blender until smooth. Adding the lemon juice and tequila last.
Cut pork in to two inch cubes
Combine all ingredients in a zip-top bag and mix well
Line a 9 x 13 inch pan with banana leaves; add the pork mixture; fold over the leaves to cover, then cover tightly with foil
Bake 4 hours at 325; serve over rice.
